Corn, Mango and Black Bean Salad

Ingredients

  • 3 c corn kernels (fresh from 6 ears or frozen and thawed)
  • 2 c peeled diced mango
  • 1 c or less chopped red onion
  • 1 c chopped red pepper
  • 1/3 c fresh lime juice
  • 2 garlic cloves, minced
  • 3 Tbs fresh cilantro, chopped
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1 chipotle chili in adobo sauce, drained and chopped
  • 2 15-oz cans black beans, rinsed and drained

Just before serving, mix all ingredients. Do not make ahead of time, as it gets mushy after a few hours.
