Ingredients
- 1 cup butter
- 1/2 cup plus 1 tablespoon confectioners sugar.
- 2 1/2 cups unsifted flour
- 4 eggs
- 1 3/4 cup sugar
- 1/3 lemon juice
- 1/2 teaspoon double acting baking powder
Preparation
Step 1
Preheat oven 350
In medium bowl cream butter, 1/2 cup confectioners sugar. Add 2 cups flour and stir with wooden spoon until well combined. Pa evenly into a 13x9 baking pan. Bake for 20 minutes,
Combine eggs, sugar, remaining 1/3 c flour, lemon juice and baking powder in blender for 5 seconds. Scrape down sides and blend another 5 sec. Pour over partially baked crust. Bake another 25 more minutes. Cool sprinkle confectioners sugar.
