Cornflake crusted, banana stuffed french toast

Ingredients

  • 1 c. cornflake crumbs
  • 1 T. toasted, sliced almonds
  • 1/2 C. egg whites or egg substitute
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 4 slices raisin bread
  • 1/4 c. mashed banana
  • strawberries and blueberries (optional)

Preparation

Step 1

1) heat griddle over md. high heat.

2) combine cornflake crumbs and almonds i bowl. combine egg, vanilla and cinnamon in another bowl.

3) dip 1 slice bread in egg mix, then coat both sides with cornflake crust. repeat with remaining bread.

4) spread banana on one side of 2 of the bread slices. top the slices with the other bread to make 2 sandwiches.

5) cook til golden brown, about 2 minutes per side.

6) cut in half, serve with fresh berries
