Cheesy Cauliflower Grits

Ingredients

  • 1/2 Head Cauliflower
  • 1 Egg
  • 1/2 c. Shredded Cheddar Cheese
  • 1/2 tsp. Cayenne Pepper
  • 1/2 tsp. Garlic Powder

Preparation

Step 1

Grate Fresh Cauliflower or place in food processor. Use everything but the leaves of the Cauliflower. Microwave for 2 - 2:30 minutes and blend in egg and cheese thoroughly. Spray skillet with Pam or use olive oil. Scoop the mixture onto a hot skillet into the size of small pancake(s). Depending on thickness and how crispy you want them, cook at least 3 minutes on each side.

Top with sour cream if desired.
