Fennel Salad with Parmesan

Ingredients

  • 3 fennel bulbs,halved lengthwise & cored, fronds reserved
  • 1/3 C chopped kalamata olives
  • 2 T lemon juice
  • 1 T chopped capers
  • Salt & pepper
  • 3 T olive oil
  • 2 oz. shavings Parmesan cheese

Preparation

Step 1

Thinly slice fennel using mandoline.
In large bowl combine olives with lemon juice capers & salt & pepper.
Slowly drizzle in olive oil using whisk. Add fennel slices & chopped olives. Mound salad on plates & top with Parmesan shavings.
