Ingredients
- 3 fennel bulbs,halved lengthwise & cored, fronds reserved
- 1/3 C chopped kalamata olives
- 2 T lemon juice
- 1 T chopped capers
- Salt & pepper
- 3 T olive oil
- 2 oz. shavings Parmesan cheese

Step 1
Thinly slice fennel using mandoline.
In large bowl combine olives with lemon juice capers & salt & pepper.
Slowly drizzle in olive oil using whisk. Add fennel slices & chopped olives. Mound salad on plates & top with Parmesan shavings.
