Ingredients
- Kosher Salt
- Sugar or Brown Sugar
- 1 to 1 ratio of above..no more than 1 cup of each
- peppercorns
- 1 onion
- 1 carrot
- bunch of scallions
Preparation
Step 1
Heat the ingredients on the stove with water until sugar and salt are dissolved.
Cool completely..dilute mixture with cold water..volume depends on the size of the turkey.
Turkey should be brined for 8-10 hours. If brining longer, reduce salt and sugar to 3/4 cup.
Put into a storage bag inside of a bucket in the refrigerator.
