Ingredients
- Red onion
- orange juice
- juice of lime
- honey
- Dijon mustard
- olive oil
- baby arugula
- avocados
- oranges
- toasted almonds
Preparation
Step 1
Soak 1/4 thinly sliced red onion in cold water, about 10 min.
Whisk 1/4 cup orange juice, the juice of 1 lime, 1 T. honey, 2 teaspoons Dijon mustard, 1/2 t. salt, and pepper to taste in a bowl.
Whisk in 3 T. olive oil.
Drain the onions and toss with 6 cups of baby arugula (works with spinach as well)
2 large sliced avocados
2 or 3 oranges segmented
Add the dressing and top with sliced toasted almonds
Makes 6 servings
