Ingredients
- LEMON FILLING:
- 1 pie crust
- 1 1/2 cups sugar
- 1/3 cup cornstarch
- 6 tbsp. flour
- 1/4 tsp. salt
- 4 large eggs separated(using only yolks for this part)
- 1 1/2 cups cold water
- 1/3 cup fresh lemon juice
- 2 tbsp. margarine
- 1 tbsp. grated lemon zest
- MERINGUE:
Preparation
Step 1
1. Mix the sugar,cornstarch,flour,and salt in a saucepan.
2. Beat the egg yolks in a small bowl. Whisk the cold water,lemon juice, and beaten egg yolks into the flour mixture.
3. Bring to a boil over medium heat,stirring constantly,until custard begins to thicken. Remove from heat. Stir in the margarine and lemon zest. Pour the filling into the cooled pie crust.
