Ingredients
- 2 lbs dried black beans
- 2 lbs beef short ribs
- 3 medium sweet onions, chopped
- 4 garlic cloves, minced
- 12 cups water
- 2 TBS ground chipotle chile pepper
- 1 tsp salt
- 1 1/2 tsp ground cumin
Preparation
Step 1
Soak beans in water to cover for 8 hrs. Drain. Brown ribs in a little oil in a Dutch oven over medium-high heat. Add onions and garlic; saute til onions are tender. Add beans, water, and next 3 ingredients. Bring to a boil; reduce heat, cover and simmer, stirring occasionally, for 2 to 3 hrs or til beans are tender. Salt to taste.
