Greek Tortellini Salad

Ingredients

  • 18oz pkg cheese tortellini
  • 1/2 C olive oil
  • 1/8-1/4 C lemon juice
  • 1/4 C red wine vinegar
  • 2 Tbl chopped fresh parsley
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 6 eggs
  • 1 lb baby spinach leaves
  • 1 C crumbles feta cheese

Preparation

Step 1

1. Cook tortellini approx 7 minutes, drain.
2. In large bowl mix olive oil, lemon juice, red wine vinegar, parsley, oregano and salt.
3. Mix in cooked tortellini, toss to coat.
4. Cover and chill at least 2 hours.
5. Then add spinach, feta and sliced hard boiled eggs.
