Potato Cheese Soup

I usually add a little more potato, Beck says add more cheese.

Ingredients

  • 5 large potatoes, peeled and sliced
  • 6 C chicken (or vegetable) stock (49 1/2oz can)
  • 1 1/2 C grated cheddar cheese
  • few drops hot sauce
  • 1 C cream (I use half & half)
  • 1/2 tsp salt
  • 1/4 tsp pepper

Preparation

Step 1

1. Mix first 3 ingredients together in large sauce pan.
2. Cover and simmer 1 hour.
3. Put in blender or use hand mixer and whip.
4. Return to sauce pan and add cream, salt & pepper.
5. Reheat.
