Baked Spinach Balls

Ingredients

  • 3 lbs. spinach, chopped, cooked and drained
  • 2 c. herb-flavored stuffing mix
  • 2 onions, minced
  • 5 eggs, beaten
  • 3/4 c. butter, melted
  • 1/2 c. grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 t. dried thyme
  • 1/2 t. salt
  • 1/4 t. pepper
  • Combine all ingredients in a large mixing bowl; mix well. Shape into one-inch balls; arrange on ungreased baking sheets. Bake at 350 degrees for 15 minutes; serve warm. Makes 10 dozen.
