Ingredients
- 3 pounds whole russet potatoes
- 2 tsp. kosher salt
- 1/2 cup mayonnaise
- 1/3 cup dill relish
- 6 large eggs, hard boiled and diced
- 3 celery stalks, diced
- 3 tab. prepared mustard, yellow or spicy brown
- pepper
Preparation
Step 1
Cook the potatoes until fork tender. When cool, peel and dice, mash or crumble. Stir in the mayonnaise, relish, eggs, celery, mustard, 2 tsp. salt and pepper to taste.
