Ingredients
- 1 sheet store bought refrigerated pie dough
- 1 Tbs unsalted butter
- 8 oz. frozen med. shrimp, thawed peeled, deveined
- 2 large eggs
- 1/2 cup half and half
- 1 Tbs. minced chives
- 1/4 tsp kosher salt
- 1/4 tsp. ground pepper
- 1/4 cup finely diced drained jarred red pepper
- 4 oz. crumbled feta
Preparation
Step 1
preheat to 425
press the dough into 9" fluted tart pan
pierce dough with fork and refrigerate about 10 min.
place tart shell on baking sheet with aluminum foil inside
fill with pie weights and bake 10 min.
remove foil and weights and reduce heat to 375
bake until golden and crisp about 12 min. more
cool on wire rack
melt butter in med. skillet over med-high
add shrimp and cook stirring until firm and just opaque
about 2 min., remove from heat
in med. bowl whisk together eggs, half and half, chives, salt, pepper
arrange shrimp, red peppers, and feta in shell
pour eggs over
bake until knife comes out clean about 25 min.
cool 15 min.
remove sides of pan and serve on platter warm
