Broccoli Chicken Casserole

Ingredients

  • 6 skinless, boneless chicken breast halves
  • 2 heads of broccoli
  • 3 (10.75 ounce) can condensed cream of chicken soup
  • 3 tablespoon of lemon juice
  • 1 cup mayonnaise
  • 1 teaspoon curry powder
  • 1 cup shredded Cheddar cheese
  • 1 cup dry stuffing mix
  • 4 tablespoons butter or margarine

Preparation

Step 1

Preheat oven to 350 degrees F (175 degrees C).

Bake chicken until tender and then shred or cut into bite size pieces.

Meanwhile, steam broccoli until crisp but tender.

In a small bowl mix together the soup, curry, lemon juice, and mayonnaise. Set aside.

In a 9x13 inch baking dish layer the chicken, broccoli, and soup mixture. Top with cheese. Sprinkle dry stuffing mix over the top and dot with butter. Bake in the preheated 350 oven for 25-30 minutes.
