Sweet as Sugar Snap Peas

Ingredients

  • 1 lb. sugar snap peas
  • 1/2 c. red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 T. olive oil
  • 1/2 t. salt
  • 1/4 t. pepper
  • Cover peas with water in a large saucepan and boil for 3 minutes; drain and rinse with cold water. Combine all ingredients; toss to coat. Cover and chill for one hour to overnight. Serves 4.
