Ingredients
- 1 lb. sugar snap peas
- 1/2 c. red onion, thinly sliced
- 2 cloves garlic, minced
- 2 T. olive oil
- 1/2 t. salt
- 1/4 t. pepper
- Cover peas with water in a large saucepan and boil for 3 minutes; drain and rinse with cold water. Combine all ingredients; toss to coat. Cover and chill for one hour to overnight. Serves 4.
