Sizzling Beef & Asparagus Fajitas

This dish is best served with sides of lettuce, chopped tomato, shredded cheddar & sour cream.

Ingredients

  • 11/2 tsp. each Chili Powder & Ground Cumin
  • 1/4 tsp. each Salt & Pepper
  • 1 lb. Beef Grilling Steak (Strip Loin or Sirloin)
  • 1 lb. Asparagus, trimmed & cut into quarters
  • 21/2 C. Sliced White &/or Cremini Mushrooms
  • 4 Garlic Cloves, minced
  • 2 Sweet Peppers, seeded & sliced into strips
  • 1 onion, halved & thinly sliced lengthwise
  • 4 tsp. vegetable oil
  • 1/2 tsp. Dried Oregano
  • 6 Lg. Whole Wheat Tortillas
  • 1/4 C. Fresh Cilantro Sprigs(optional)

Preparation

Step 1

In a sm. bowl, stir together chili powder, cumin, salt & pepper; rub into both sides of steak. In lg. bowl, combine asparagus, mushrooms, garlic, onions, oil & oregano. Stack tortillas & double wrap in foil. Place steak on greased grill & vegetables in grilling basket over med-high heat. Close lid & grill steak, turning once, till med-rare, about 8 min. Transfer to cutting board; tent with foil & let stand for 5 min. Grill vegetables, tossing occasionally, till tender-crisp, 8-10min. Meanwhile, place tortillas on grill & warm through, about 3 min. To serve, slice steak thinly across the grain. In bowl, combine steak, vegeatbles & cilantro(if using). Serve warm tortillas & desired accompaniments.
