Berry Breakfast Parfaits

Recipe by Daisy brand featuring their fat free cottage cheese

A wonderful way to pump up the protein at breakfast or snack time and toss in fresh veggies and crunchy cereal.

Ingredients

  • 2 cups fat-free Cottage Cheese
  • 1/2 cup low fat granola with no fruit or nuts
  • 2 cups mixed berries such as sliced strawberries, blueberries, and raspberries
  • 4 teaspoons almonds, chopped or stir in milled flax
  • I've used Post 'Just Bunches' Cinnamon flavor in place of granola as this is the tastiest granola-like cereal I've ever had!!

Directions

In four serving dishes layer 1/4 cup of cottage cheese, 1/8th of the granola, and 1/4 cup of the mixed berries. Repeat the layers in each dish. Top each parfait with 1 teaspoon of almonds. *Refrigerate the fruit mixture for 2 hours before assembling, if desired

I assemble and serve immediately, topping cottage cheese with granola instead of layering to maintain crunchy texture.
