Roasted Potatoes with Herbs

Ingredients

  • 3 lbs. red skinned potatoes, quartered
  • 6 Tbs. olive oil
  • 3 garlic cloves, minced
  • 1 Tbs dried rosemary
  • 1 Tbs. dried thyme

Preparation

Step 1

preheat oven to 500 degrees
in large bowl add oil and garlic and toss to coat
add herbs, toss again
season with salt and pepper
divide potatoes between 2 large heavy baking sheets
bake until brown and crisp
stir occasionally
about 30 min.
