Cranberry Red Cabbage Chicken Salad

Ingredients

  • 4 C. thinly sliced red cabbage
  • 1/4 C. unsweetened dried cranberries
  • 1/4 C. lite rice vinegar
  • 3 Tbs. agave nectar
  • 1 Tbs. white wine vinegar
  • 1/4 C. nonfat Voskos Greek yogurt
  • 1/4 tsp freshly ground black pepper
  • 1 C. diced apple
  • 3 Tbs. chopped pecans, toasted
  • 9 oz. shredded or cubed cooked chicken

Preparation

Step 1

Cube cooked chicken and slice red cabbage.

Toss chicken, cabbage, apples, and cranberries in a medium-sized bowl.

Mix remaining ingredients (excluding pecans).

Coat chicken mixture with dressing.

Chill until served.

Before serving add toasted chopped pecans.
