Sweet Potato Pie

Use cream cheese pie pastry with this filling.

Ingredients

  • 4 sweet potatoes
  • 1/4 lb. melted butter
  • 1/2 lemon juiced
  • 3/4 C sugar
  • 1 1/2 T flour
  • 1 T vanilla extract
  • 1/4 t nutmeg
  • 1/4 t allspice

Preparation

Step 1

1. Boil sweet potatoes 20 mins., or until tender. Remove skin and mash gently with a fork. Blend in lemon juice and butter.

2. Add sugar, vanilla, flour, allspice and nutmeg. Blend well.

3. Fill 9" pastry shell and bake an hour. Refrigerate and serve with whipped cream.
