Cheesy Potato Soup

Ingredients

  • 6 med. potatoes, peeled and chopped
  • 2 1/2 cups water
  • 1/2 cup chopped onion
  • 2 tsp. instant chicken bullion granules
  • 1/4 tsp. black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1 12oz. can evaporated milk
  • crumbled bacon (opt)
  • snipped fresh chives (opt)

Preparation

Step 1

in 3 1/2-4 qt. slow cooker combine potatoes, water, onion, bullion, and pepper
cover, cook on low 8-9 hrs. or high 4-4 1/2 hrs.
stir cheese and milk into mix in cooker, cover cook 1 hr. more on low or 30 min. on high
for thicker soup mash potatoes slightly
sprinkle each serving with bacon and chives
