Salmon & White Bean Salad

Ingredients

  • 6 tbs vinaigrette dressing, divided
  • 4 skin-on salmon fillets (1 lb.)
  • Salt & pepper
  • 1 can 19oz cannellini beans, rinsed
  • 1 plum tomato, seeded, chopped
  • 2 tbs chopped gr onions
  • 2 tbs chopped fresh basil
  • 6 c. torn leaf lettuce

Preparation

Step 1

Season fish with salt and pepper then drizzle 2 tablespoons dressing over fish in shallow dish. Refrigerate 30 min. Meanwhile, combine beans, tomatoes, onions, basil and 2 tablespoons of the remaining dressing. Heat the grill to medium heat and cover grate with foil. Place fish, skin-sides down, on the foil. Grill 10 to 15 minute or until fish flakes easily with fork. Toss lettuce with remaining dressing and place on 4 serving plates. Top with fish and bean mixture.
