Spring Vegetables with Mint and Lemon

Ingredients

  • 3 pds lava beans ( frozen at Trader Joe's)
  • 1/2 pd asparagus ends removed
  • 1/2 pd sugar snap peas, ends trimmed
  • 1 TBSP extra virgin olive oil
  • 1 tsp lemon zest
  • 1 TBSP chopped fresh mint
  • S&P
  • Can use any vegetables you like

Preparation

Step 1

Cook lava beans. Cut asparagus into 2" pieces add to boiling water and cook 3-4 minutes
Add sugar snap peas to boiling water simmer until Tender 2 minutes.

Before serving add olive oil to a frying pan, add the vegetables, lemon zest, mint, S&P and stir until warm.
