Ingredients
- 3 pds lava beans ( frozen at Trader Joe's)
- 1/2 pd asparagus ends removed
- 1/2 pd sugar snap peas, ends trimmed
- 1 TBSP extra virgin olive oil
- 1 tsp lemon zest
- 1 TBSP chopped fresh mint
- S&P
- Can use any vegetables you like

Preparation
Step 1
Cook lava beans. Cut asparagus into 2" pieces add to boiling water and cook 3-4 minutes
Add sugar snap peas to boiling water simmer until Tender 2 minutes.
Before serving add olive oil to a frying pan, add the vegetables, lemon zest, mint, S&P and stir until warm.
