Broccoli Cheese Muffins

Ingredients

  • 1 1/2 c. Bisquick mix
  • 1/2 c. milk
  • 3 tbsp. vegetable oil
  • 1 lg. egg
  • 1/2 c. frozen broccoli cuts, steamed till crisp tender, drained, and finely chopped
  • 1 c. shredded sharp cheddar cheese
  • 1/4 tsp. onion powder

Preparation

Step 1

Heat oven to 400. Spray 12 cup muffin pan w/ cooking spray.
In large bowl, stir together Bisquick mix, milk, oil, and egg. Stir in broccoli, cheese, onion powder till combined. Spoon mixture evenly into prepared muffin cups.
Bake 8-10 mins. or till golden brown. Cool 5 mins; remove from pans. Serve warm.
