Zucchini Bake

Ingredients

  • 2 1/2 - 3 lbs zucchini, shredded
  • 1/2 c flour
  • 5 eggs
  • 1 large can evaporated milk
  • 3 c Monterey Jack Cheese, shredded
  • 1 tsp. active dry yeast
  • onion
  • salt & pepper
  • 1/4 c butter, melted

Preparation

Step 1

In large pan combine zucchini and cheese.
Combine onion, butter, flour,milk salt & pepper; blend well.
Separate eggs; beat whites until foamy; stir in yolks and yeast. Combine everything and bake at 350* for 40-45 min
