Pumpkin Coffee Cake with Brown Sugar Glaze

Ingredients

  • 1/3 cups of water
  • 1 can pureed pumpkin (15oz can)
  • 2 eggs
  • 1 Tablespoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 yellow cake mix
  • 1 teaspoonsoda
  • 1 cup brown sugar,divided
  • 1/2 cups flour
  • 1/3 cup chopped pecans
  • 4 tablespoons butter, melted
  • 1/4 cups sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy whipping cream

Preparation

Step 1

Preheat oven to 350.

In a large bowl mix the water, pumpkin, eggs, tablespoon of vanilla, and pumpkin pie spice until well combined.

Add the cake mix until just combined. Place in greased 9 x 13 pan.

In a small bowl mix ½ cup brown sugar, ½ cup flour, pecans, and butter. Sprinkle over the cake mixture.

Bake for 25-20 minutes-or until toothpick is clean.

For the glaze,mix the ½ cup brown sugar, sugar, teaspoon of vanilla, and cream in a saucepan and bring to a simmer.

Remove from heat and stir until sugar is dissolved.

When the cake is finished baking poke holes in top with a toothpick.

Pour glaze over the cake, making sure to cover all the surfaces.

Serve cake warm or at room temperature.
