Blueberry Crumb Bars

This is a really great dessert! My favorite is to use the black raspberry filling, as that is Russell's favorite. But, any flavor pie filling or fruit preserves would work well!

Ingredients

  • 2 sticks butter, softened
  • 2 1/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/4 teaspoon fine sea salt
  • 1 egg, beaten
  • 1 cup blueberry pie filling; strawberry, raspberry, or black raspberry preserves

Preparation

Step 1

Preheat the oven to 375 degrees

Using a fork or pastry cutter mix together until ingredients are crumbly.

Pat half (I use a little more than half) of the dough into the bottom of a 9x13 baking pan and cook the bottom half for 7-10 minutes. Remove and pour filling over the crust and top with remaining crumb mixture and cook for 30 minutes (keep checking, this may be too much time, in my oven it takes about 15-20 min.), until the top is light brown color.
