Mustard Glazed Roast Beef

Ingredients

  • 2 T. Dijon mustard
  • 2 T. dry hot English mustard
  • 2 T. horseradish
  • 2 T. sugar
  • 2 1/2 kg. roast beef

Preparation

Step 1

Combine mustards, horseradish and sugar; stir together well. Cover roast beef with glaze and chill at least 4 hours or overnight. Place in roasting pan with rack and bake for 20 minutes at 240ºC and then reduce to 180ºC for 35 minutes.
