Ingredients
- 1 c. water
- 1 tbsp. lemon juice
- 2 (4oz.) single serving size salmon steaks
- 1/4 c. cucumber, finely chopped
- 1/4 c. nonfat plain yogurt
- 1 tsp. minced parsley
- 1/4 tsp. dried dill or 1 tsp. fresh dill, chopped
- 1/2 tsp. lemon juice
- fresh ground pepper
- 6 tender lettuce leaves
- 2 lemon wedges
Preparation
Step 1
Heat water & lemon juice to boiling; add salmon in single layer. simmer very gently for 10 mins. Remove salmon w/ slotted spatula. Cover and chill. combine yogurt, cucumber, parsley, dill, onion, lemon juice, and pepper. Arrange salmon on lettuce w/ lemon wedges & cucumber sauce.
