Ingredients

  • 1 c. water
  • 1 tbsp. lemon juice
  • 2 (4oz.) single serving size salmon steaks
  • 1/4 c. cucumber, finely chopped
  • 1/4 c. nonfat plain yogurt
  • 1 tsp. minced parsley
  • 1/4 tsp. dried dill or 1 tsp. fresh dill, chopped
  • 1/2 tsp. lemon juice
  • fresh ground pepper
  • 6 tender lettuce leaves
  • 2 lemon wedges

Preparation

Step 1

Heat water & lemon juice to boiling; add salmon in single layer. simmer very gently for 10 mins. Remove salmon w/ slotted spatula. Cover and chill. combine yogurt, cucumber, parsley, dill, onion, lemon juice, and pepper. Arrange salmon on lettuce w/ lemon wedges & cucumber sauce.
