Rum-Spiked Grilled Pineapple

Ingredients

  • 1/4 cup packed brown sugar
  • 1/4 cup spiced dark rum
  • 1 pineapple, peeled, cored, halved lengthwise and sliced long ways into 12 wedges
  • 1 tblsp. butter
  • 2 tblsp. sweetened flaked coconut, toasted

Preparation

Step 1

- combine sugar and rum in a microwave safe bowl
- microwave on HIGH until sugar dissolves (1 1/2 min.)
- brush mixture over pineapple wedges
- melt butter in a grill pan
- add pineapple and grill 3 minutes on each side or until grill marks appear and fruit is warmed through
- Sprinkle with coconut
- serve as you wish with ice cream or as a side with chicken or pork
