Marinated Shrimp Appetizer

Ingredients

  • 1/4 C. Olive Oil
  • 2 large cloves garlic, minced
  • 1 T. dry mustard
  • 1 t. Salt
  • 1/2 C. lemon juice
  • 1 T. red wine vinegar
  • 1 bay leaf, crumbled
  • Dash - cayenne pepper
  • 2 T. chopped fresh parsley
  • 1 small red onion, thinly sliced
  • 2 T. capers, drained
  • 2 lbs. shrimp (cooked, peeled, and deveined)

Preparation

Step 1

Combine oil, garlic, mustard, salt, lemon juice, vinegar, bay leaf, and cayenne pepper in a bowl. Mix well. Stir in parsley, onions, and capers.

Add shrimp, tossing until well coated. Cover and refrigerate 2 hours. Drain marinade and remove bay leaf.

Serve shrimp with onions and capers.
