Ingredients
- 1 lb. portobello mushrooms
- 3 tbsp oil
- 1 lb. pork tenderloin-cut in 2 inch pieces
- 2 large red or yellow bell peppers-2 inch pieces
- 1 med onion
- 2 tsp cornstarch
- 1/2 tsp dried thyme
- 1 tsp salt
- 1/4 tsp pepper
- 3/4 cup white wine or water
Preparation
Step 1
halve mushrooms-set aside-
heat oil-med heat-add pork-cook 10 mins til
no longer pink - remove - keep warm
add oil - add peppers,onion,and mushrooms-
cover simmer 10 mins til tender
combine cornstarch,thyme,salt,pepper,with
3/4 cup wine or water - stir into mixture-
cook til clear and slightly thickened.
return pork to skillet - serve over noodles
or rice if desired
