Chicken w/Leeks and Asparagus

Threw this together and is definitely a keeper
this goes great with mashed potatoes or couscous

Ingredients
- 1 lb. chicken breasts, cut into chunks
- 1 bunch of leeks, sliced and washed
- 1 bunch asparagus, washed and cut into thirds after breaking off ends.
- 3/4 c sliced dried tomatoes in oil
- evoo
- salt
- pepper
- white wine vinegar
- 5 artichokes marinating in oil
- artichoke marinade
Preparation
Step 1
Put 2 tbs evoo in pan, let heat up and place chicken in pan.
After browned and no longer pink, throw in leeks, asparagus, dried tomatoes, artichokes and mix together.
Let cook for 1 min. Put in 1 evoo tbs and 1 cup of the artichoke marinade, 2 tbs white wine vinegar. Let cook for 5 minutes. Salt lightly and pepper.
Serve over mashed potatoes.
