orange roughy

Ingredients

  • 4 pieces of orange roughy
  • 3 tbsp butter melted
  • 1/3 cup parmesan cheese
  • 1/3 cup minced parsley
  • 1/3 cup seasoned bread crumbs
  • Olive oil
  • White wine

Preparation

Step 1

Take four pieces of foil and put 1 tbsp of olive oil in center of each one. Take fish and coat each side with olive oil. Melt butter and mix with next three ingredients. Spoon ¼ of mixture on top of each piece of fish.Pour 1 tbsp of wine over each serving and fold foil over fish.
Bake at 350’ about 10 minutes or until fish is flaky when cut with fork
