Cider Bacon Brussels Sprouts
Easy to make. Great for the winter cold and those special suppers.

Ingredients
- 1 1/2 pounds of brussels sprouts cut lengthwise in half
- 4 slices of bacon chopped
- 1 medium shallot finely chopped
- 1 small tart apple cored and diced
- 2 sprigs of fresh thyme
- 1/2 cup apple cider of juice
- 1/2 cup toasted pecans
- freshly ground black pepper to taste
Preparation
Step 1
*Boil large pot of lightly salted water and add brussels sprouts for 5-6 minutes.
*Drain well.
*While sprouts are cooking - heat a skillet over medium saute bacon until crisp.
*Remove bacon to drain leaving drippings in pan.
*Saute shallots in drippings until tender, scraping up brown bits.
*Add brussels sprouts and let caramelize on the cut side.
*Add apple and thyme.
*Add cider/juice and deglaze the pan.
*Cook on high until the liquid is reduced and sprouts are tender (not mushy).
*Toss in bacon and pecans then season with pepper.
*Serve warm.
