Ingredients
- 1 bunch of asparagus (the thinner the better, more tender), about 1 lb.
- 2 T. extra virgin olive oil
- 2 T. freshly grated parmesan cheese
- 1 t. lemon zest, freshly grated
- Salt & freshly ground black pepper
Preparation
Step 1
Prepare the asparagus by rinsing thoroughly, break off the bottoms and discard. Cut into 1 to 2 inch sections, slicing the asparagus at a slight diagonal.
Fill a medium sized saucepan halfway with water, bring to a boil. Add the asparagus and reduce heat slightly to a simmer. Parboil the asparagus for exactly 2 minutes. Drain the hot water. While the asparagus is still hot, toss in a bowl with olive oil, Parmesan and lemon rind. Salt & pepper to taste. Serve warm or room temperature.
