Ingredients
- 1 T EVOO
- 2 t curry
- 1 can coconut milk (13.5 oz)
- 1 T minced garlic
- 1 t grated ginger
- chicken breasts, cut into bite size pieces
- 2 t Chinese 5-spice
- 1/2 t salt
- 1/2 t pepper
Preparation
Step 1
Heat EVOO, stir in curry and cook 1 minute. Add coconut milk. Add garlic and ginger.Cook and reduce by 1/2. Toss chicken breast in 5-spice, salt and pepper. Saute in EVOO. Stir chicken in sauce and serve over rice.
