Ingredients
- pork tenderloin
- 2 tbsp cumin
- 2 tbsp coriander
- dried chilies
- 2 tbsp salt
- 2 tbsp olive oil
- 1/4 cup maple syrup
- 1 " sliced rings pineapple
- 3 peaches, halved
- 1 tbsp butter
Preparation
Step 1
1. Preheat oven to 400F.
2. Sear pork on all sides 2-3 minutes.
3. Remove to plate.
4. Rub with syrup and pat 1 tbsp dry rub per tenderloin onto all sides.
5. Return to skillet.
6. Bake 18-20 min.
7. Let rest 15 minutes.
8. Grill fruit until slightly tender, brushing with butter.
