Ingredients
- 2 c. salt
- 2 gallons cold water
- 1 c. sugar
- 1 turkey
- 1 T. whole peppercorns
Preparation
Step 1
1. Add all ingredients, except turkey, in a stock pot or cooler, and stir to dissolve salt and sugar.
2. Place turkey in pot, breast side down; cover and chill 6-24 hours.
3. Remove turkey from brine; rinse inside and out. Pat dry.
4. Place turkey in pan and place in fridge to dry skin further (this will help skin brown more during cooking, but may be omitted).
5. Cook turkey at 325 degrees F, adding 1 cup of water to roasting pan at start of cooking.
6. Baste often, til done. Use meat thermometer placed in meatiest part of thigh to check doneness.
