Shrimp Empanadas

Ingredients

  • Cooking Spray
  • 2 tsp. olive oil
  • 1 green bell pepper, seeded and diced
  • 2 scallions, chopped
  • 2 cloves garlic, minced
  • 1/2 lb. shrimp, peeled and deveined, cut into 1/2 " pcs.
  • 1 tsp. chili powder
  • 1 tsp ground cumin
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 24 wonton wrappers

Preparation

Step 1

Preheat oven to 375 degrees. Coat a large baking sheet with cooking spray.
Heat oil in a large skillet over medium-high heat. Add bell pepper, scallions, and garlic and cook 3 minutes, until soft.
Add shrimp and cook 2 minutes. Add chili powder, cumin, salt, pepper and stir to coat. Cook 1 minute, until spices are fragrant. Remove from heat.

Arrange wonton wrappers on a flat surface. Top each with 2 tsp shrimp mixture. Wet outer edges of wrappers with water-moistened fingers and then fold the wonton in half, making a half mmon. Press the edges together to seal. Transfer wontons to prepared baking sheet and spray the top with cooking spray. Bake 15 to 20 minutes, until golden brown
