Creamy Smoked Salmon Bucatini with Dill

Can be made with any smoked fish but salmon is particularly nice.

Ingredients
- 6 spring onions, trimmed and finely sliced
- 150 ml vegetable or chicken stock
- 200 g quark
- 2 garlic cloves, minced
- a pinch of nutmeg
- 4 tbsp finely chopped dill
- juice of 1/2 lemon
- 500 g runner beans, thinly sliced
- 350 g dried bucatini or other pasta shapes
- 150 g smoked salmon, cut into small strips
Preparation
Step 1
1) Cook the pasta according to package instructions, adding the runner beans for the last 4-5 minutes. Drain and set aside.
2) Meanwhile, spray large frying pan with cooking spray. Fry the spring onions for 1 minute, then add stock. Boil hard for 2-3 minutes.
3) Stir in garlic and nutmeg. Stir in the lemon juice and dill.
4) Add quark to the pasta and beans, along with the stock mixture and salmon. Stir. Gently heat to warn through, if necessary. Serve immediately.
