Apple Dumpling Cobbler

Ingredients

  • 3 cups 3 cups apples, cored, peeled, chopped
  • 1/2 cup 1/2 cup granulated sugar
  • 1/2 cup 1/2 cup brown sugar
  • 3 tablespoons 3 tablespoons unsalted butter, divided
  • 2 teaspoons 2 teaspoons ground cinnamon
  • 1/8 teaspoon 1/8 teaspoon nutmeg
  • Dough for one 9-inch pie crust (homemade or store bought)
  • 1 teaspoon 1 teaspoon granulated sugar mixed with 1/4 teaspoon ground cinnamon
  • Vanilla ice cream, for serving

Preparation

Step 1

Preheat oven to 375°F.

Place the apples into a single layer in the bottom of a casserole dish or pan (mine was 8- by 6-inches).

In a medium saucepan, combine the granulated sugar, brown sugar, 2 tablespoons butter, cinnamon and nutmeg. Bring to a boil, stirring as the butter melts. Boil 5 minutes or until it starts to thicken a little. Pour over apples.

On a floured surface, roll out the pie dough to cover pan with 1/8-inch thickness. Place over the apples and seal.

Melt remaining 1 tablespoon butter. Brush over the dough, then sprinkle on the cinnamon sugar mixture. Make 3 slits into the dough to let steam escape.

Bake 30 to 35 minutes or until the crust is golden brown and the apple mixture is bubbling. Cool at least 15 minutes before serving with ice cream.
