Ingredients
- 1 C UNCOOKED ELBOW MACARONI
- 1 EGG
- 1/4 C HALF AND HALF
- 2 T BUTTER, MELTED
- 1/2 C GRATED PARMESAN CHEESE
- 3/4 C SHREDDED MOZZARELLA CHEESE, DIVIDED
- 1 CLOVE GARLIC, MINCED
- 1/4 t SALT
- 1/8 t PEPPER
- 1/4 # UNCOOKED MED SHRIMP, PEELED, DEVEINED
- AND CHOPPED
- 3/4 C CHOPPED SPINACH (OR ASPARAGUS)
Preparation
Step 1
COOK MACARONI ACCORDING TO PACKAGE DIRECTIONS. MEANWHILE, IN A SMALL BOWL, COMBINE THE EGG, CREAM AND BUTTER; SET ASIDE. DRAIN MACARONI. ADD THE PARMESAN CHEESE, 1/2 C MOZZARELLA, GARLIC, SALT, PEPPER AND RESERVED EGG MIXTURE; TOSS TO COAT. STIR IN SHRIMP AND SPINACH.(IF USING ASPARAGUS, EITHER BLANCH THEM OR SAUTE THEM TO GET THEM PARTIALLY COOKED)
TRANSFER TO A 1 QT BAKING DISH COATED WITH COOKING SPRAY. SPRINKLE WITH REMAINING WITH REMAINING MOZZARELLA CHEESE. BAKE, UNCOVERED AT 350 FOR 20-25 MINUTES OR UNTIL SHRIMP TURN PINK AND CHEESE IS MELTED.
