Chunky Tomato Soup

Ingredients

  • 2 T butter
  • 2 T olive oil
  • 1 large coarsely chopped white onion
  • 4 med. diced shallots
  • Salt & pepper
  • 3 28oz. cans crushed plum tomatoes
  • 4 C chicken broth
  • 1 bay leaf
  • 1 t hot pepper flakes
  • 1 T balsamic vinegar

Preparation

Step 1

In large pot, melt butter with olive oil. Add onion, shallots, salt & pepper. Stir to blend. Add tomatoes and broth; bring to boil. Reduce heat to med-lo & simmer @ 15 min. Add bay leaf & crushed pepper.
Just before serving, puree mixture to rough stage. Add vinegar at last moment.
