Asparagus Salad with Toasted Walnuts & Goat Cheese

Ingredients

  • 1 C walnut halves
  • 1/2 fennel seeds
  • 2 lbs asparagus
  • 1/4 C olive oil
  • 1 1/2 T sherry vinegar
  • 1 scallion, minced
  • 1 T chopped tarragon
  • 1 T chopped mint
  • Salt & pepper
  • 4 oz goat cheese

Preparation

Step 1

Preheat oven to 350. Spread wlanuts on baking sheet & bake 8 min. Transfer to plate to cool, then break in half lengthwise
Meanwhile in small skillet, toast fennel over mod-hi heat til fragrant & golden, @ 20 seconds. Transfer to work surface to cool; then finely chop
Steam asparagus til tender crisp. Let cool cut into 2" diagonal lengths
Meanwhile in large bowl, whisk olive oil with vinegar, scallion, tarragon, mint & chopped fennel seeds. Season with salt & pepper
Add asparagus & walnuts to bowl & toss. Add goat cheese. Season with salt & pepper & serve.
