SPICY SAUSAGE SHELLS

  • 1 LB ROPE STYLE SAUSAGE CUT INTO 1/2 INCH SLICES
  • 1 CUP COARSELY CHOPPED GREEN PEPPER
  • 3/4 CUP COARSELY CHOPPED ONION
  • 1 3/4 CUP SALSA
  • 1 3/4 CUP TOMATO SAUCE
  • 6 CUPS LARGE SHELLS UNCOOKED
  • 3/4 CUP CHOPPED RIPE OLIVES
  • 1/2 CUP SHREDDED CHEDDAR CHEESE

Preparation

Step 1

IN LARGE SAUCEPAN OVER MEDIUM HEAT, COOK SAUSAGE UNTIL NO LONGER PINK, STIRRING FREQUENTLY; DRAIN. ADD GREEN PEPPER AND ONION TO SAUCEPAN; COOK STIRRING FREQUENTLY 3-5 MINUTES UNTIL TENDER. ADD SALSA AND TOMATO SAUCE HEAT TO BOILING. REDUCE HEAT SIMMER UNCOVERED 15 MINUTES OR UNTIL SAUSAGE IS THOROUGHLY COOKED. COOK PASTA ACCORDING TO DIRECTIONS. ADD RIPE OLIVES TO SAUCE TOSS HOT PASTA WITH SAUCE AND TOP WITH CHEESE.
